Preheat oven to 180degrees. Cook the quinoa as per instructions on the packet. Whilst cooking, grate your mushrooms into a small mixing bowl. Add a little drizzle of olive oil, salt & the dried parsley and mix well.

Beat an egg in a mug and pour over the mushrooms, combine well then add the pesto,  breadcrumbs & spring onion. Once the quinoa is cooked, add to the mushroom mix and stir all ingredients in together.

Grease a cake or muffin tray (as seen in pictures) with either a little olive or coconut oil. Ensure your hands are as clean as they can be & spoon a tablespoon of the mixture into your hands, gently mould into a circlular shape and place into the greased tray. Repeat until all mixture has been used. Mine made 7 koftas.

Put into the oven for 20 minutes. Serve with a green side salad or a wholemeal pitta with a yogurt & mint dressing. Enjoy!
